Wonder what other gluten free eaters are eating? me too.

This is a running compilation of things I eat that are GF (but not always vegan, vegetarian, lactose free, etc.). I would say my main dietary habits are that I am gluten free (and more and more, grain free) and that I am “meat-light” = I eat meat pretty conservatively.

I keep this as a food diary, as I have been needing to let doctors know what I am eating, and this is much easier for me than hand writing. Plus, it's a resource for me to come back to when I need reminders of recipes.

yada yada: I have been gluten free since November 2010.

Biggest challenges and weaknesses? beer, pizza, bagels, tortillas. Besides that, I have found replacements for all things glutonous.

This is pretty much meal prep for the week for me. Made beets and de-seeded the pomegranate for salads. Soaked coconut flakes to top smoothies (overnight coconut, @grokgrub, love it!), and made the cilantro for various uses. #beets #pomegranate #coconut #pesto

Cauliflower and bacon: this is pretty much all I had in my fridge for lunch! So, this. And some kraut and homebrewcha. For the cauli: steam, while making bacon simultaneously. Take bacon off and chop. Put steamed cauli in pan with some baking fat (I use duck fat), dill, and lemon juice. Add chopped bacon. Eat. #kombucha #cauliflower #kraut

What’s for dinner? Well daylight is running out and i do hate those  night photos…so how about what’s marinating? Chicken thighs in a tandoori sauce (not nightshade free! I’m doing bad on that one lately). With a side of (not marinating, but finished) vanilla coconut milk panna cotta. I should stay home more often…Ingredients: chicken: kefir, garlic, ginger, paprika, cumin, coriander, salt. Panna cotta: coconut milk, vanilla, cinnamon, Great Lakes gelatin, tiniest bit of maple syrup. #whatsmarinating #pannacotta
